What to know about colby jack

Colby jack is the marbled orange-and-white cheese that blends mild colby with monterey jack. Both are young, lightly aged cheeses, so like colby it sits at the milder end for histamine and tyramine, well below sharp aged cheeses. The blend does behave a little differently from plain colby, though: it is only moderate in lactose but high in dairy protein, so with colby jack the casein and whey are the main concern rather than the milk sugar. If aged cheddar gives you headaches, colby jack is a gentler swap, but it is still very much a milk cheese.

Watch for
