  • Raw oysters can carry Vibrio vulnificus, a naturally occurring marine bacterium that has nothing to do with sewage or dirty handling. Infections are uncommon but severe: CDC figures put the death rate at roughly one in five, sometimes within a day or two, and the burden falls overwhelmingly on people with liver disease, iron overload conditions such as haemochromatosis, or a suppressed immune system. Cases peak through the warm water months
  • Norovirus is the more frequent oyster problem. A filter feeder concentrates it from sewage-affected water, and light steaming just until the shells open is not reliable inactivation

  • Moderate histamine (C), driven by handling rather than the species. Squid frozen at sea stays low, but seafood held warm on a counter climbs, so how it was stored matters more than how it was cooked.
  • Squid is a mollusc, and molluscs are labelled as a separate allergen group from crustaceans like prawns and crab. A crustacean allergy does not automatically mean a calamari allergy, and the reverse is equally true.

  • Moderate histamine (graded C). Shellfish amines climb once the catch comes off ice, so how a clam was handled between the boat and the pan matters more than the species does
  • Moderate nickel (C). Molluscs are one of the recognised dietary nickel sources, which is worth logging if you are working through systemic nickel allergy

Practical

Working with molluscs

  • Check stir-fry sauces and marinades, where oyster sauce is a standard ingredient.
  • Check crustaceans separately, and ignore the name: oyster mushroom is a fungus, not a mollusc.
  • Keep a detailed food and symptom diary to track your personal reactions
  • Eliminate the suspected trigger completely for 2-4 weeks
  • Reintroduce gradually to find your personal tolerance threshold
  • Work with a healthcare provider or registered dietitian for guidance
  • Remember that food sensitivities can change over time

Test it with a diary

Most people find their own triggers by logging meals and symptoms for a few weeks and reading the result back. Three steps.

  1. 1Log every meal for a few weeks. Type it, say it out loud, or scan a barcode, and it lands as a list of ingredients.
  2. 2Rate how you feel through the day on whatever you are tracking, whether that is bloating, headaches, skin or sleep.
  3. 3Read the pattern back. Every ingredient you logged is scored against the days you felt worse, and the result ranks molluscs against everything else you eat.

Questions people ask

Is conch a shellfish, and does it count for a shellfish allergy?

Conch is a gastropod, a very large marine snail, so it is shellfish in the mollusc sense rather than the crustacean sense. That matters on a label. EU rules require molluscs to be declared as their own allergen, but US labelling law only compels crustacean shellfish to be named, so conch can appear in a chowder or a fritter without a shellfish warning on the front of the pack. If your diagnosis is crustacean allergy, conch is a separate question for testing, not an automatic no and not an automatic yes.

Can I eat snails if I am allergic to shellfish?

It depends which shellfish. Snails are molluscs, so they sit with mussels, clams, oysters, squid and abalone rather than with prawns, crab and lobster, which are crustaceans. The two groups are often lumped together on menus but allergy to one does not automatically mean allergy to the other. Molluscs do share tropomyosin as a major allergen among themselves, so if you react to mussels or squid, snail is a genuine risk. If your allergy is specifically to crustaceans, snail is less predictable and worth discussing with an allergist rather than testing over dinner.

Are oysters high in histamine?

Moderate, not high, and the number moves with handling rather than with the oyster. An oyster is alive until it is shucked, which is unusual among foods and keeps histamine low right up to service, so a shuck-to-order oyster is about as low as shellfish gets. Once open, the meat and its liquor start accumulating amines like any other seafood. Tinned, smoked and pre-shucked oysters, and anything held in a tub for a day, are the versions that cause trouble for histamine intolerant people.

How risky is it really to eat raw oysters?

For a healthy adult the odds of a serious Vibrio vulnificus infection are low, and most raw oyster illness is unpleasant norovirus rather than anything dangerous. The picture changes sharply with certain conditions. Chronic liver disease raises the rate of vibrio illness after raw oysters by orders of magnitude, and among people who do develop a V. vulnificus infection about one in five die. If you have liver disease, haemochromatosis, cancer treatment, diabetes or any immune suppression, the sensible line is cooked oysters only. The old rule about eating oysters in months with an R in them is a rough seasonal proxy for water temperature and not a safety system.

Does squid contain sulfites?

It often can. Cephalopods discolour quickly once dead, so processors treat them to keep the flesh white, and EU food additive rules explicitly permit sulphur dioxide and sulphites on fresh, frozen and deep-frozen cephalopods up to 150 mg/kg. Our data grades squid low-moderate for sulfites for exactly this reason. Packaged squid has to declare sulfites above 10 mg/kg, so read the label. At an unpackaged counter, ask whether the squid has been treated, and if nobody knows, treat it as if it has been.
