Heavy cream is a high-fat dairy product, and being high in fat does not make it dairy-free. It carries concentrated casein and whey (dairy proteins graded high) plus a moderate amount of lactose, so it can still trigger a milk allergy or lactose intolerance even in the small pouring amounts used for coffee, sauces and soups. People often assume cream is safer than milk because it is richer, but the milk proteins that drive true dairy reactions are actually more concentrated here.
