What to know about spelt flour
Spelt flour is milled from spelt, an ancient subspecies of wheat, and the most important fact about it is the one health-food marketing tends to blur: spelt is wheat. Our data grades spelt flour gluten E and fructans D, so it is unsafe in coeliac disease and it is not a low FODMAP flour. The widely repeated claim that spelt is gentler than modern wheat does not survive a look at the numbers here, because ordinary wheat flour is graded fructans D too. What is real is that plenty of people with IBS report tolerating spelt sourdough, and the credit belongs to the long sourdough fermentation, which consumes fructans, rather than to anything intrinsic about the grain. Away from gluten and FODMAPs spelt flour is mild: borderline at C for salicylates and oxalate, and only lightly graded at B for histamine, tyramine, nickel, lectins and glutamates.
Watch for
- Contains gluten, graded E.Spelt is Triticum spelta, a wheat, so it must be avoided in coeliac disease and in wheat allergy exactly as common wheat is. Being an ancient grain confers no exemption.
- Fructans graded D, the same grade our data gives ordinary wheat flour.Spelt flour is high FODMAP in normal baking quantities, so treat any "spelt is lower FODMAP" claim as unproven for the raw flour.
- The spelt sourdough exception is about the process, not the grain.A long, slow proof lets the starter degrade fructans; a quick yeasted spelt loaf or a spelt pancake gets none of that benefit.
- Wholemeal spelt flour carries more fructan than white spelt flour, because the outer layers of a wheat kernel are where fructans concentrate.
- Spelt gluten is weaker and more water soluble than modern wheat gluten, so spelt doughs slacken if overworked.That is a baking quirk, not evidence of better tolerance.
