What to know about farro
Farro is an ancient wheat, most often emmer, and the fact that matters most is the one the marketing tends to skip: it is still wheat. It grades E for gluten, so it is not a gluten-free grain and it is not safe in coeliac disease. It also grades E for fructans and E for total FODMAP load, which is why a farro salad or a bowl of farro soup can bloat someone who eats rice without a second thought. The "ancient grains are easier to digest" claim is worth answering honestly: some people do say they tolerate emmer or einkorn better than modern bread wheat, but there is no established mechanism for that, the gluten is still there, and none of it changes the coeliac answer.
Watch for
- Contains gluten (graded E).All three farro types are wheat species: farro piccolo is einkorn, farro medio is emmer, farro grande is spelt. None are coeliac-safe
- Very high in fructans (E), the wheat FODMAP that drives bloating and wind, and E overall on FODMAPs.Portion control does not rescue it the way it does for a borderline grain
- High in lectins (D), so it needs a proper soak and a full simmer rather than a quick undercooked bite
- Poor fit for low-fermentation SIBO protocols (E), because the fructan load feeds bacterial fermentation directly
- Pearled, semi-pearled and whole farro differ in bran and cooking time, not in gluten.Pearling strips fibre and speeds cooking, but the gluten and the fructans stay put
