Seitan is pure wheat gluten, the stretchy protein washed out of wheat flour, which makes it the single most concentrated source of gluten you can eat and an absolute no for anyone with celiac disease or a wheat allergy. Sold as vegan wheat meat, it is otherwise a clean, high-protein food on most triggers, but on gluten it is completely off the chart. Store-bought seitan is also usually marinated in soy sauce and vinegar, which layers histamine on top.
