Corn grits are naturally gluten free and low FODMAP, and they grade clean on histamine, salicylates, free glutamates, nickel and sulfites, which makes them one of the calmer hot breakfasts for a reactive gut. The one trigger they genuinely flag is lectins, where grits grade high. The other soft spot is not the corn at all: it is cross contamination, because most grits are milled and shipped on lines that also handle wheat.

Watch for

High in lectins, the only food chemistry trigger grits actually flag. Lectins are heat sensitive and grits are simmered wet for a long time, so the exposure from a properly cooked pot is lower than the raw grade suggests, but quick five minute instant grits get far less of that treatment / Naturally gluten free as a grain, yet coeliacs still react to some brands.
