Quinoa flour is quinoa seed ground to powder, and its defining problem is flavour rather than chemistry. It carries a strong grassy, faintly bitter taste, and that bitterness is saponin residue from the seed coat coming through concentrated in the grind. It is the reason almost nobody bakes with quinoa flour alone: it goes into a blend at roughly a quarter to a third and lets a neutral flour carry the rest. On triggers it is quiet, graded A for gluten, histamine, salicylates, sulfites, glutamates and tyramine. The grades worth actually knowing are three borderlines: B for oxalate, B for nickel and B for total FODMAPs. All three are portion questions, and all three get bigger the more of the blend is quinoa flour.

Watch for

The bitterness is saponin residue from the seed coat, not spoilage. Flour milled from pre washed quinoa tastes noticeably milder, and dry toasting the flour in a low oven before baking knocks the grassy edge off / Quinoa flour carries the seed oil with it, so it goes rancid faster than a plain starch does. A sharp, painty smell is old flour, and that is a different bitterness from the saponin one / Graded B for nickel, which matters if you have systemic nickel allergy: wholegrain and seed flours sit in the moderate band as a group, so treat quinoa flour as a food to portion rather than a free food / Graded B for oxalate. Fine for most people, worth weighing if you are on a low oxalate protocol / Graded B for FODMAPs, so a bake built mostly on quinoa flour is a much larger load than the same bake with quinoa flour at a quarter of the blend
