Rice noodles are the base of pho, pad thai, laksa and bun bo hue, and on paper they are one of the safest carbohydrates you can order: graded A for gluten, A across all four FODMAP columns, and A for histamine, salicylates, oxalate, nickel, lectins and glutamates. If you react to a bowl of pho, the noodles are rarely the culprit. The two things that actually go wrong are the packet, because plenty of noodles sold as rice noodles blend in wheat starch or tapioca, and the kitchen, because a busy restaurant boils them in the same water it boils wheat noodles and wontons in.

Watch for

Read the ingredients, not the name. Fresh and cheaper dried noodles sold as rice noodles often list wheat starch or tapioca starch alongside the rice, which matters if you are coeliac rather than just avoiding wheat / Shared cooking water is the standard restaurant problem. The same pot, strainer and wok that handled wheat noodles usually handles yours, so gluten free in the packet does not survive the kitchen / The sauces carry the triggers, not the noodle. Soy sauce is usually brewed with wheat, fish sauce and oyster sauce are fermented and high in histamine and free glutamate, and hoisin adds both / A long-simmered pho broth is a genuine histamine load. Bone broths concentrate histamine the longer and the more often they are reheated, which catches people who tolerate the noodles perfectly well / Graded borderline (B) for SIBO.
