What to know about tomatillo
Yes, the tomatillo is a nightshade, and that is the answer most people are looking for. The confusion comes from the name and the colour: a tomatillo is not an unripe tomato and not a tomato at all, it is Physalis, the husk-fruit genus, grown in a papery calyx with a sticky coating underneath. Different genus, same family, Solanaceae. We grade it C for nightshade, a genuine nightshade but a milder one than tomato at E or bell pepper at D. On everything else it is gentle: clean on histamine content, tyramine, oxalate, nickel, sulfites and gluten, with moderate grades for FODMAP by volume, excess fructose, salicylate, free glutamate and histamine liberation. As the base of salsa verde, it is a much lighter load than the tomato base of salsa roja.
Watch for
- It is a nightshade.If nightshades are your trigger, salsa verde is not the nightshade-free alternative to red salsa that its colour suggests, and the tomatillo is only half the problem since most salsa verde also contains green chilli
- Not an unripe tomato.The husk and the sticky film are Physalis markers, and no amount of ripening turns a tomatillo into a tomato. Green tomatoes are a separate food with a much higher nightshade grade
- Moderate FODMAP by volume, with excess fructose at the moderate level.A spoonful of salsa verde is a different dose from a bowl of tomatillo stew, and the fructose is what makes portion size matter
- Moderate free glutamate, which is part of why salsa verde tastes savoury rather than merely sour, and a mild histamine liberator despite containing little histamine itself
- Jarred and restaurant salsa verde is rarely just tomatillo.Onion, garlic, chilli, lime and often added acid come with it, and those carry heavier FODMAP and histamine liberation loads than the fruit
