What to know about whole wheat flour

Whole wheat flour is milled from the entire kernel, so it keeps the bran and germ that white flour discards. That extra layer is where much of the wheat fructan and fermentable fiber sits, so whole wheat flour is at least as high in fructans as refined flour, not lower, and it rates high FODMAP. It also contains gluten, exactly like white flour, so it is no help for celiac disease or gluten sensitivity. Anything you bake with it, from bread to muffins, carries that fructan and gluten load.

Watch for

  • Contains gluten, so choosing whole wheat over white flour makes no difference for celiac disease or gluten sensitivity
  • High in fructans, and the retained bran means it is not lower in FODMAPs than white flour despite the healthier label
