What to know about kidney beans
Kidney beans are a high-FODMAP legume, loaded with galacto-oligosaccharides (GOS), which is the main reason they cause gas, bloating and cramps. They are also very high in oxalate, high in nickel and high in salicylates, and raw or undercooked kidney beans carry a real toxin: the lectin phytohaemagglutinin, so they must be boiled hard, never slow-cooked from raw.

- High in GOS, the FODMAP that ferments in the gut and drives the classic bean bloating and wind, especially from dried beans that were not well soaked and drained
- Very high in oxalate, so a frequent trigger if you form calcium-oxalate kidney stones or follow a low-oxalate diet
- High in nickel and high in salicylates, two separate triggers that can show up as skin flares even when the gut copes
- Raw and undercooked kidney beans are toxic: they hold the most phytohaemagglutinin of any bean and must be boiled at a rolling boil for at least 10 to 30 minutes, never left raw in a slow cooker where they only warm to a danger zone
