Antelope means two different animals on two different continents: pronghorn on a North American hunting tag, springbok, kudu or impala on a southern African plate. Both are exceptionally lean wild ruminants and both grade A across the whole trigger chart, with no histamine, tyramine, salicylate, oxalate, FODMAP, nickel, sulfite or nitrite load in the fresh meat. Nothing about the species is the problem. What matters with antelope is what happens after the shot, because it is mammalian meat and therefore inside the alpha-gal picture, and because far more antelope is eaten dried and cured as biltong than is ever eaten fresh.
