What to know about fresh cheese
Fresh cheese is the unaged family of cheeses (mozzarella, ricotta, cottage cheese, cream cheese, queso fresco) and it flips the usual cheese trade-off. Because it is not aged, it is low in histamine (grade A), the opposite of blue cheese or parmesan, but it is high in lactose (grade E) and carries moderate dairy protein.
