What to know about peanut oil

Peanut oil is the textbook case of an allergen that survives or disappears depending on how the oil was made. Highly refined peanut oil, the kind used in commercial fryers and sold as plain cooking oil, has been de-gummed, neutralised, bleached and deodorised, which strips out the peanut protein that actually causes allergic reactions. That is why US law exempts highly refined peanut oil from allergen labelling and why many peanut-allergic people eat fries cooked in it without incident. Cold-pressed, expeller-pressed and aromatic gourmet peanut oil is a different product: it keeps residual peanut protein and is not considered safe. Watch for

  • Because the refined form is exempt from labelling, a product or restaurant is under no obligation to declare it, so "no peanut on the label" is not the same as "no peanut oil in the fryer"
  • Graded high on lectins, reflecting its legume origin.The plant protein fraction that carries lectins is exactly what full refining removes, so unrefined bottles are the ones to question
  • Rated pro-inflammatory: peanut oil is roughly a third linoleic acid, so it pushes omega-6 intake up if it is your default cooking fat
  • Clean on histamine, histamine liberation, tyramine, nickel, sulfites and gluten, and only borderline on FODMAPs, since FODMAPs are water soluble and do not carry into pressed fat
