What to know about queso fresco
Queso fresco is a soft, unaged Mexican cheese, and being fresh flips the usual cheese trade off. Because it is not aged, it grades high in lactose and very high in dairy protein, unlike hard aged cheeses where most of the milk sugar has fermented away. That makes it a common trigger for lactose intolerance and milk protein sensitivity. The upside of being young is low histamine and low tyramine, so it rarely causes the flushing or headaches that aged cheeses like parmesan or blue cheese can.
