What to know about powdered milk
Powdered milk is whole milk with the water dried off, and drying does not remove what triggers people, it concentrates it. Gram for gram it is very high in lactose and high in dairy protein (casein and whey), so a spoonful reconstitutes into the same bloating, cramps or mucus that a glass of milk causes, often in a serving that looks smaller. If you are lactose intolerant or react to milk protein, the powdered form is not a gentler option.

- Very high in lactose (graded E): the water is gone but the milk sugar is not, making it one of the most concentrated lactose sources by weight
- High in dairy protein (casein and whey, graded E), the trigger behind milk-protein reactions that are separate from lactose intolerance
