What to know about pepper jack
Pepper jack is Monterey Jack studded with jalapeño or other chili peppers, and its trigger profile comes from the cheese, not the flecks of chili. It grades high in dairy protein, high in histamine as a semi aged jack cheese, and high in free glutamate, the umami amine that can read as a headache or flush for sensitive people. The chili adds capsaicin heat that can aggravate reflux or an irritable gut, but the amount is small and it grades clean for nightshades, so pepper jack is not a meaningful nightshade trigger the way a tomato or a fresh chili is.
