What to know about red lentils
Red lentils are split and skinned, so they cook in minutes and break down into a soft dal, but that does not make them low FODMAP: they are still high in galacto-oligosaccharides (GOS) and carry a heavy nickel load. Where red lentils do win over whole brown or green lentils is oxalate, which is much lower here, so they are a smarter lentil if kidney stones or oxalate sensitivity are your issue.

- High in GOS and total FODMAPs, so a normal dal-sized serving commonly triggers bloating and gas despite the quick, soft cook
