What to know about light cream

Light cream, also sold as coffee or table cream, is cream with less butterfat than heavy cream, around eighteen to twenty percent. Lighter does not mean dairy-free: the milk protein it carries is graded high, and it holds a moderate amount of lactose, so the dairy triggers are much the same as richer cream. In fact, because light cream is thinner and keeps more of the watery part of milk, its lactose per spoon is not far below heavy cream. A pour in coffee or a splash in soup still counts as dairy for casein, whey and lactose alike.

Watch for

  • High in dairy protein (casein and whey) despite the lower fat, so it can still set off a cow milk allergy
  • Moderate lactose that the reduced fat does not remove, enough to bother lactose intolerance across a few coffees
  • Moderate FODMAP and graded pro-inflammatory, so a sensitive gut may notice it in sauces and soups
