Emu is red meat from a bird, and that one sentence resolves most of what people want to know about it. Emu is a ratite, a flightless bird whose legs do all the work, so the muscle is dense slow-twitch fibre loaded with myoglobin and the fillets come off burgundy rather than pale. For a trigger journal the consequence is the useful part. Emu is graded A on histamine, histamine liberation, tyramine, free glutamate, salicylate, nickel, sulfite, nitrite, gluten and lactose, and because it is a bird it contains no alpha-gal, the mammalian sugar that takes beef, pork, lamb and venison away after a lone star tick bite. Its only mark is a mild FODMAP grade, and that belongs to how emu is sold rather than to the bird.

No alpha-gal, because birds do not build it. Emu belongs with chicken, turkey and ostrich on the safe side of alpha-gal syndrome rather than with the red meats it resembles on the plate. / Every FODMAP group grades clean, because plain emu is protein and fat with no fermentable carbohydrate at all. What reaches most people is burger patties, sausage or jerky, and those are built with onion powder, garlic powder and often a sweetener. Log the packet, not the species. / Emu oil is not emu meat. It is rendered from the fat pad and sold as a topical cream, a capsule and a cosmetic ingredient, with its own claims and its own evidence base. Nothing on this page describes it. / The fillet runs very lean, so it toughens and turns livery if you take it past medium rare. That is why emu almost always arrives with a butter, red wine or berry pan sauce, and that sauce is a far more plausible trigger than the bird under it. / Emu is farmed rather than shot, which quietly removes the lead fragment and chronic wasting disease cautions that shadow every wild red meat in this database. / Oxalate is unrated here rather than graded clean.
