What to know about apple butter
Apple butter is apples slow-cooked for hours until the water boils off and the fruit sugars concentrate, which is exactly what makes it a strong gut trigger. It is very high in excess fructose and high in the polyol sorbitol, both FODMAPs, so a spoonful delivers far more fermentable sugar than a fresh apple.
