What to know about antelope
Antelope means two different animals on two different continents: pronghorn on a North American hunting tag, springbok, kudu or impala on a southern African plate. Both are exceptionally lean wild ruminants and both grade A across the whole trigger chart, with no histamine, tyramine, salicylate, oxalate, FODMAP, nickel, sulfite or nitrite load in the fresh meat. Nothing about the species is the problem. What matters with antelope is what happens after the shot, because it is mammalian meat and therefore inside the alpha-gal picture, and because far more antelope is eaten dried and cured as biltong than is ever eaten fresh.
Watch for
- Alpha-gal covers antelope the way it covers beef, and there is a nasty overlap here: the people most likely to be eating wild antelope are the people spending most time in tick habitat, which is where the sensitisation comes from in the first place
- Biltong and droewors are a different food from the animal they came from.Air-dried, salted, vinegar-cured game is matured protein, and maturation is exactly how meat accumulates histamine and tyramine. Fresh antelope sitting fine while biltong does not is an amine story, not a species story
- Game is routinely hung for days before butchering, which is deliberate ageing.Ask how long the carcass hung if amines are something you track
- Wild-shot game taken with lead ammunition can carry metal fragments far from the wound channel, which is why several health departments advise against lead-shot venison and antelope for young children and during pregnancy
