What to know about buckwheat
Buckwheat is naturally gluten-free, so it gets used as a wheat swap, but it carries its own triggers that have nothing to do with gluten. It is high in oxalates, high in nickel and high in lectins. That means it can still cause trouble for anyone managing kidney-stone risk, systemic nickel allergy or lectin sensitivity, so gluten-free does not make it a clean grain across the board.
