Snapper is one of the cleanest entries in this database. It grades A for histamine, histamine liberation, salicylates, oxalates, nickel, sulfites, nitrites, glutamates and tyramine, and it is gluten free and lactose free. If you are hunting a food chemistry trigger, plain snapper is very unlikely to be it. Two other things about snapper are worth knowing, and neither is a sensitivity. The first is identity: DNA testing has repeatedly found that most fish sold as red snapper is a different species entirely. The second is ciguatera, a toxin that large tropical reef fish accumulate from reef algae, which survives cooking, freezing and smoking and produces a very distinctive burning response to cold.

Watch for

Species substitution is rampant. Oceana DNA tested 120 US samples sold as red snapper and only 7 actually were, an 87 percent mislabelling rate. Inconsistent reactions to "snapper" in a diary may simply be several different fish / Ciguatoxin builds up through the tropical reef food chain into large snapper, grouper, barracuda and amberjack. It is heat, cold and acid stable with no taste, smell or colour, so no cooking or freezing method removes it and no kitchen test detects it / The signature of ciguatera is cold allodynia: cool water or a cold drink registering as burning or electric pain. It appears in the large majority of cases and can outlast the gut symptoms by weeks. That is acute poisoning needing medical care, not a food sensitivity to log and retry / Bioaccumulation scales with size and age, so a large reef caught snapper carries more risk than a small farmed or cold water fillet / Clean on every FODMAP group. In a real meal the fermentable load comes from the marinade, not the fillet
