Catfish is one of the quieter proteins in a trigger journal: graded clean on gluten, lactose, every FODMAP column, salicylates, oxalates, nickel, glutamates, tyramine and lectins, with no nightshade, sulfite or dairy flags. Its single non-clean grade is histamine, and only at borderline. Farmed catfish tends to go from pond to ice within hours, which is exactly the handling that keeps fish histamine low. Realistically, when a plate of catfish causes symptoms it is rarely the fillet. The cornmeal and flour crust, the blackening spice and the tartar sauce all grade far worse than the fish underneath them.

Watch for

Borderline on histamine, a freshness measure rather than a species one. Catfish is a lean freshwater fish without the histidine-heavy dark muscle that makes tuna and mackerel scombroid risks, so cold handling keeps it low / Fried catfish is a different food from catfish. Fish-fry breaders are usually cornmeal cut with wheat flour, so a coated fillet is not gluten free unless you dredged it yourself, and the fryer is shared with battered items / Blackening and Cajun rubs are built on paprika and cayenne, both graded high on nightshade, and paprika is also high in salicylates. The crust can trigger someone the fish would not / Tartar sauce carries the rest of the load: it grades high FODMAP and pro-inflammatory. Lemon and hot sauce-free seasoning keep the test clean if you are trying to isolate the fish
