What to know about sesame paste

Sesame paste is the broad term, and it covers more than tahini. Middle Eastern tahini is made from hulled seeds that are raw or barely toasted, while Chinese zhima jiang and Japanese neri goma are ground from deeply toasted seed, often with the hull left on, which makes them darker, more bitter and not interchangeable in a recipe. Trigger-wise the two land in the same place. We grade sesame paste high for oxalate and high for nickel, the two loads that come with grinding a lot of small seeds into a spoonable concentrate, and the hull matters here: we grade whole sesame seeds worse for oxalate than hulled ones, so an unhulled toasted paste sits at the top of that band. Then there is the allergen. Sesame is a declared major allergen in the United States, the EU and the UK, and a paste is the most protein-dense form you can eat. Everything else about it is quiet. Sesame paste grades clean for gluten, lactose, dairy protein, sulfites, tyramine, nitrites and nightshade, low for histamine, and it rates strongly anti-inflammatory.

  • High in oxalate, and a paste concentrates it.A tablespoon is a lot of seeds, which is the mechanism worth understanding if you form calcium oxalate kidney stones
  • The hull carries much of that oxalate.We grade whole sesame seeds a notch worse than hulled ones, so a hulled paste sits at the lower end of the high band and an unhulled toasted paste at the top
  • High in nickel.Sesame is a nickel accumulator, and seed pastes are one of the routes people exceed a low-nickel target without noticing, alongside oats, legumes and cocoa
  • Sesame is a declared major allergen.Roasting and grinding do not destroy the protein, so toasted Chinese and Japanese pastes are fully allergenic, and even unrefined toasted sesame oil retains enough protein to matter
  • Moderate fructans, so while a small serving grades low FODMAP, a generous dollop in a dressing or a bowl of noodles adds up
