What to know about melon seeds

Melon seeds are the kernels of melons, watermelons and their gourd relatives, roasted and salted as a snack across China, Iran, Turkey and Egypt and ground into the thick seed paste that carries West African soups and stews. For a seed they grade unusually quietly. Total FODMAPs come in at A with every subgroup clean, which is rare in this category, and histamine, gluten, lactose, dairy protein, sulfites, nitrites, glutamates, tyramine and nightshades are all A. The two grades to plan around are nickel at C and mild (B) marks on salicylates and oxalate, the standard seed profile, plus whatever the roasting and seasoning added on the way to the packet.

Watch for

  • Nickel is graded C.Seeds are one of the first food groups pulled on a low-nickel trial, and a bowl of roasted melon seeds is a heavier nickel load than the same volume of most snacks
  • Mild (B) salicylate and oxalate grades.Irrelevant in a sprinkle, worth counting if a seed-thickened stew is a several-times-a-week staple and your oxalate budget is already tight
  • Seasoning is where the trouble usually is.Packaged roasted seeds arrive with salt blends, chilli, MSG-style flavourings and occasionally sulfited coatings, none of which the plain seed grade covers
  • Histamine liberation is unrated for melon seed.The seed itself is graded A for histamine content, so if a stew thickened with them sets you off, look at the fermented, aged or stock-based parts of the dish first
  • Whole seeds are dense and fibrous.A large portion is a mechanical load on a gut that is already irritable, independent of any chemical trigger
