What to know about hulled sesame seeds
Hulled sesame seeds are sesame with the outer seed coat polished off, which is what gives them their pale, pearly white look. The hull is not just cosmetic: it holds the large majority of the seed's oxalate and most of its calcium, so hulling genuinely changes the trigger profile. In our data that shows up as a real, measurable drop, from the top oxalate grade for whole sesame seeds down to the tier below for hulled. High rather than extreme is still high, so anyone managing calcium-oxalate kidney stones should treat hulled sesame as a food to portion rather than a food that has been fixed. - High nickel grade.Seeds and nuts are among the most nickel-dense foods, and unlike oxalate this is not concentrated in the hull, so hulled and unhulled behave the same way for systemic nickel allergy
- A declarable allergen.Sesame became the ninth major US food allergen under the FASTER Act, with labelling required from January 2023, and it hides in burger buns, hummus, halva, za'atar, dukkah, tahini dressings and a lot of Middle Eastern and East Asian cooking
- Moderate fructan grade at volume, which is easy to reach when sesame is a coating or a crust rather than a garnish, plus a borderline EoE grade
- Clean or near-clean everywhere else: safe grades for gluten, lactose, dairy protein, tyramine, sulfites, nightshade and lectins, with an anti-inflammatory rating at the good end
