What to know about apple butter
Apple butter is apples slow-cooked for hours until the water boils off and the fruit sugars concentrate, which is exactly what makes it a strong gut trigger. It is very high in excess fructose and high in the polyol sorbitol, both FODMAPs, so a spoonful delivers far more fermentable sugar than a fresh apple. If apples or apple juice give you bloating, gas or diarrhoea, apple butter tends to be worse gram for gram.
Watch for
- Very high in excess fructose, a FODMAP that is poorly absorbed and a leading cause of bloating, wind and diarrhoea, made more concentrated by the long cook
- High in sorbitol, a polyol FODMAP naturally present in apples that concentrates further as the butter reduces
- One of the poorer choices for SIBO, since the concentrated free fructose feeds fermentation
