A Cornish hen is not game and not a separate species. Under the USDA definition a Rock Cornish game hen is simply a young immature chicken of a Cornish or Cornish cross breed, slaughtered small and sold whole at around a kilo or less, and it does not have to be a hen at all. That matters for a trigger diary because game birds carry a real amine story from hanging and Cornish hens do not: this is chicken, and it grades like chicken. FODMAPs, gluten, lactose, dairy protein, salicylates, oxalates, nickel, sulfites, nitrites and glutamates are all clean, and it fits DASH and Mediterranean patterns. It sits at a moderate B for histamine rather than the A a fresh chicken breast gets, which reflects the way these birds actually reach you: almost always frozen whole, then thawed at home, often after a long spell in the freezer case.
