Sensitivity notes

Why gos food checker matters

Galacto-oligosaccharides (GOS) are carbohydrates found mainly in legumes and some vegetables. They're a FODMAP that can ferment in the gut, causing bloating and discomfort in sensitive people.

  • Canned and rinsed legumes are lower in GOS than dried
  • Start with smaller portions and build up tolerance
  • Some people find beano-type enzymes helpful

Serving size, prep, and portion notes for olive oil

Olive oil is one of the cleanest foods you can put on a plate. It is low FODMAP and clean on histamine, salicylate, oxalate, nickel and gluten, so it is safe for histamine intolerance, IBS and salicylate sensitivity alike. Better still, it is actively anti-inflammatory: the monounsaturated fat and polyphenols in extra virgin olive oil are the backbone of the Mediterranean diet. For most sensitive eaters this is a reassurance page, not a warning.

Watch for

No meaningful trigger: olive oil is low histamine, low salicylate, low FODMAP and gluten free / Anti-inflammatory rather than pro-inflammatory, one of the few kitchen staples that scores well on inflammation / Infused or flavoured olive oils add garlic, chilli or herbs, so any reaction comes from the add-in, not the oil
