Crab is a crustacean, the same allergen family as shrimp, prawn and lobster, and crustacean allergy tends to be strong, lifelong and shared across the group. Away from allergy the profile is mild: no gluten, no glutamates, no tyramine, no nitrites, and unlike prawn it grades clean on sulfites, since the sulfite dips used to stop black spot are a shrimp and lobster practice rather than a crab one. What does need attention is moderate histamine, moderate nickel, the cadmium in the brown meat, and the fact that a lot of what is sold as crab is not crab at all.

Picked crab meat is one of the more perishable seafoods, and the amine load of a crab cake depends on how long the meat sat before it was mixed and how long the cake sat after / Imitation crab is a different food. Surimi sticks are usually pollock or another white fish rebuilt with starch, sugar and egg white, and the starch is often wheat, so a gluten free or fish avoiding reader can be caught by a product real crab would never have flagged / Moderate nickel (C), a shared trait across shellfish and worth tracking if nickel is one of your suspects / The brown meat inside the shell concentrates cadmium far more than the white claw and leg meat, which is why UK guidance is to keep brown crab meat occasional while placing no limit on white meat
