Crab is a crustacean, the same allergen family as shrimp, prawn and lobster, and crustacean allergy tends to be strong, lifelong and shared across the group. Away from allergy the profile is mild: no gluten, no glutamates, no tyramine, no nitrites, and unlike prawn it grades clean on sulfites, since the sulfite dips used to stop black spot are a shrimp and lobster practice rather than a crab one. What does need attention is moderate histamine, moderate nickel, the cadmium in the brown meat, and the fact that a lot of what is sold as crab is not crab at all.
