What to know about kefir

Kefir is a cultured milk drink that gets sold as a gut-health hero, which is exactly why its trigger profile surprises people. The long ferment with dozens of bacteria and yeasts builds up histamine and tyramine, so kefir is high in both, and because it starts as milk it is also very high in lactose and carries the same casein and whey dairy proteins. If you tolerate probiotics but still react to kefir with congestion, flushing or gut upset, the fermentation and the dairy are usually why.
