Sensitivity notes

Why glutamates food checker matters

Glutamates, including MSG, are flavor enhancers found naturally in many foods and added to others. Some people report sensitivity causing headaches, flushing, or other symptoms, though research on 'MSG syndrome' is mixed.

  • MSG goes by many names - look for 'glutamate' on labels
  • Naturally high in soy sauce, fish sauce, and aged cheeses
  • Tomatoes and mushrooms are naturally high in glutamates
  • Yeast extract and hydrolyzed proteins contain glutamates
  • Fresh, unprocessed foods are generally lower

What to know about huckleberry

Huckleberry is the fruit that other berry pages on this site keep pointing at, and the grades explain why. Where blackberry and blueberry both grade high in salicylates and high FODMAP, and the bramble hybrids carry a heavy sorbitol load on top, huckleberry grades mild for salicylates, mild for total FODMAPs, clean for oxalate, clean for histamine content, and clean for nickel, sulfites, tyramine and free glutamates. It carries no polyol grade whatsoever, and polyols are the single most common reason a bowl of berries produces wind and cramping ninety minutes later. The complication is the word itself. In the American West a huckleberry is Vaccinium membranaceum, effectively a wild bilberry. In the East a true huckleberry is a Gaylussacia, recognisable by ten hard seeds you can feel between your teeth. And garden huckleberry is neither: it is a Solanum, a nightshade that has to be cooked.

Watch for

  • Garden huckleberry and wonderberry are nightshades and not this fruit. They are Solanum species, they are cooked rather than eaten raw, the unripe green fruit carries glycoalkaloids, and none of the clean grades on this page describe them. If you avoid nightshades, the word huckleberry on a seed packet and the word huckleberry on a jar of Montana jam are two different foods
  • Graded mild for total FODMAPs with mild excess fructose behind it, and clean for fructans, GOS and polyols. That combination is worth reading carefully: if huckleberry ever does upset your gut, unabsorbed fructose in a large portion is the mechanism, and sorbitol, the usual berry culprit, is not involved at all
  • Mild histamine liberator grade sitting on top of clean histamine content.Nothing dramatic, but it is the only histamine entry the fruit has, so it is the one to watch if you get flush or itch rather than bloating
  • Western huckleberries have resisted domestication for decades because the plant depends on specific soil fungi and disturbed subalpine ground.Practically everything sold is wild picked, which means most exposure is jam, syrup, pie filling, taffy or a milkshake, where sugar rather than fruit is the dominant ingredient
  • Salicylate grades mild, a full step below blueberry and blackberry, both of which grade high. That gap is the reason huckleberry works as a genuine substitute in a salicylate elimination rather than a swap in name only
