What to know about greek yogurt

Greek yogurt is strained, and straining drains off some of the watery whey that carries lactose, so it is only moderate in lactose, lower than milk or regular yogurt. The trade-off is dairy protein: concentrating the curd makes Greek yogurt very high in casein, which is exactly why it is prized for protein and exactly why it still triggers a milk protein sensitivity. Its live cultures also pre-digest some lactose, but the mild fermentation nudges histamine to borderline, so histamine-sensitive people can react even when lactose is not the issue.
