What to know about goat cheese

Goat cheese (chèvre) grades high in histamine and high in tyramine, which is why an aged, tangy log can bring on flushing, headaches or a racing heart in amine sensitive people even when a plain cheese does not. It is still high in dairy protein: goat casein is A2 dominant and lower in the aS1 fraction that drives many cow reactions, so some people with a cow dairy intolerance digest it more comfortably, but it is not casein free and a true cow milk allergy usually cross reacts. Lactose sits moderate, a notch below most cow cheeses.

Watch for

  • High in histamine, and it climbs the longer and sharper the cheese is aged, so a mature chèvre can trigger flushing, hives or headaches on a histamine intolerance
  • High in tyramine, the amine behind cheese linked migraines and a real concern if you take an MAOI
  • High in dairy protein (casein); the A2-type casein in goat milk is gentler for some cow dairy reactors but still cross reacts in a diagnosed milk allergy
  • Moderate lactose, lower than most cow milk cheeses but not lactose free
