What to know about celery stalk

A single celery stalk is where the low-FODMAP maths gets strict: Monash puts the safe limit at roughly half a stalk, because celery is very high in mannitol, a sugar alcohol. That matters most for the celery-juice trend, where several stalks are blended into one glass and the polyol load stacks fast. It is also poorly suited to a SIBO approach for the same reason, even though the stalk is otherwise a clean, non-reactive food.
