Celery seed is the one spice on this list where the allergy label matters more than the chemistry grades. Celery is a declarable allergen in the EU and UK, one of the fourteen that must be named on a label no matter how small the amount, and celery seed is the concentrated form of it: the seed of wild celery (smallage), not the salad stalk. Reactions to celery are well documented and range from oral itching to full anaphylaxis, including exercise-dependent cases where the food alone is tolerated. On the food-chemistry side the seed reads clean, with histamine, salicylate, oxalate, nickel, glutamate and every FODMAP subgroup graded A, and none of the stalk's polyol problem carries over at pinch quantities. So if you tolerate celery, the seed is an easy seasoning. If you do not, the seed is the version most likely to hide from you, because it mostly reaches your plate as celery salt.
