Celery seed is the one spice on this list where the allergy label matters more than the chemistry grades. Celery is a declarable allergen in the EU and UK, one of the fourteen that must be named on a label no matter how small the amount, and celery seed is the concentrated form of it: the seed of wild celery (smallage), not the salad stalk. Reactions to celery are well documented and range from oral itching to full anaphylaxis, including exercise-dependent cases where the food alone is tolerated. On the food-chemistry side the seed reads clean, with histamine, salicylate, oxalate, nickel, glutamate and every FODMAP subgroup graded A, and none of the stalk's polyol problem carries over at pinch quantities.
