Why glutamates food checker matters
Glutamates, including MSG, are flavor enhancers found naturally in many foods and added to others. Some people report sensitivity causing headaches, flushing, or other symptoms, though research on 'MSG syndrome' is mixed.
- MSG goes by many names - look for 'glutamate' on labels
- Naturally high in soy sauce, fish sauce, and aged cheeses
- Tomatoes and mushrooms are naturally high in glutamates
- Yeast extract and hydrolyzed proteins contain glutamates
- Fresh, unprocessed foods are generally lower

What to know about cauliflower
Is cauliflower low FODMAP? Not really. Cauliflower is high in mannitol, a polyol FODMAP, which is why the low-carb darling behind cauliflower rice and cauliflower pizza crust can wreck a sensitive or SIBO gut. It is clean on histamine, oxalate and nickel and is genuinely anti-inflammatory, so the trouble is almost entirely fermentation: it grades high FODMAP, high polyol and poor for SIBO, plus moderately high in salicylates.
Watch for
- High in mannitol, a polyol FODMAP, so even a modest portion can cause bloating, gas and cramps in IBS
- Ferments heavily, making it a poor pick on a low-fermentation SIBO diet
- Moderately high in salicylates, a trigger for salicylate-sensitive people
- Otherwise low in histamine, oxalate and nickel, so for most reactors the issue is FODMAP alone
