Garlic scapes are the curling flower stalks that hardneck garlic throws up in early summer, snapped off so the plant sends its energy back down into the bulb. They are the one part of the garlic plant a low FODMAP eater can genuinely use. Scapes grade B for fructans where the bulb grades E, and C for FODMAPs overall where the bulb grades D, which is why scapes turn up on low FODMAP substitute lists that garlic itself will never appear on. Monash lab tested them under the name garlic shoots and put a low serving at 30 g, with fructans and fructose both rising to moderate by 40 g and the whole thing high by 75 g. That is a portion story, not a ban. Everything outside the FODMAP columns is quiet: scapes grade A for histamine, histamine liberation, salicylate, oxalate, nickel, glutamates, sulfite, nightshade, gluten and lactose. If garlic is the thing that reliably bloats you, the flavour was never the problem. The dose lives in the bulb.

Watch for

The grade is moderate rather than low because portion decides it. Roughly 30 g, a couple of chopped scapes stirred through a pan, tests low; around 40 g fructans and fructose both go moderate; by 75 g it is a high FODMAP serving. Scapes are sold in bunches and the honest risk is using the whole bunch in one dish / Two FODMAP levers, not one. Fructans grade B but excess fructose grades C, which is unusual for an allium: the garlic bulb is graded A on fructose. So a scape can bother a fructose malabsorber even at a fructan load they tolerate / The garlic-infused oil trick does not transfer. That works because fructans are water soluble and stay behind in the discarded bulb, but with scapes you are eating the vegetable itself, so cooking, roasting or blitzing into a pesto keeps the whole load in the dish / Clean on every non-FODMAP trigger we grade: A for histamine and histamine liberation, A for salicylate, A for oxalate, nickel, glutamates and sulfites, A for nightshade, gluten, lactose and dairy protein.
