Serving size, prep, and portion notes for chive

Chives are the allium you get to keep. Onion, garlic, leek and shallot all grade at the top of the fructan scale and are the first things cut on a low FODMAP diet, but chives grade clean on fructans because the fructans live in the bulb and chives are grown for their hollow green leaves. They also carry no histamine, oxalate or nickel flag. The overall FODMAP grade is mildly borderline only because volume eventually catches up.

Watch for

Clean on fructans at garnish amounts, but the overall FODMAP grade is borderline, so treating chives as a bulk vegetable rather than a herb changes the maths / Chives are still a true allium and still contain the sulfur compounds that give onions their bite. If your onion reaction is reflux or an allium sensitivity rather than a fructan problem, chives can still bother you / Mild salicylate content, worth noting only if you are running a strict salicylate elimination / Onion salt, onion powder and chive-and-onion blends are not chives. Check the label rather than the name on the front
