Fresh raw shoots contain taxiphyllin, a cyanogenic compound that releases hydrogen cyanide, which is exactly why bamboo shoots reach the shops already boiled or canned rather than raw.

- Graded high in oxalate, which puts bamboo shoots in the same conversation as spinach and rhubarb if you form calcium oxalate kidney stones or are following a low oxalate protocol
- Soluble oxalate leaches into cooking water, so shoots that were boiled with the water discarded carry less than shoots simmered in a sauce that stays on the plate
