What to know about pork loin
Pork loin is the lean roasting joint, and as fresh meat it is one of the cleaner proteins: low in histamine, gluten free, low FODMAP and free of dairy, sulfites and nickel. The catch is that a loin is cooked as a large joint and eaten over several days, and that is exactly where histamine intolerance gets caught out.
