What to know about buffalo meat
Buffalo meat here means the real thing: Asian water buffalo (Bubalus bubalis), farmed from Campania to Uttar Pradesh to Luzon, and one of the most widely eaten red meats on earth even though it barely appears on Western menus. It is graded fully clean on FODMAPs and all four FODMAP subgroups, on lactose, gluten, dairy protein, histamine, tyramine, sulfites, nitrites, glutamates and nightshades. Salicylates and oxalates sit at a borderline B, which is cautious for plain muscle meat and worth reading as thin data rather than a chemical load. The practical point is that buffalo is almost never eaten plain. It is a slow braise and curry meat, so the chilli, tomato, garlic and onion in the pot carry the triggers, not the animal. And the dairy half of the same animal is an entirely separate story: water buffalo milk is what mozzarella di bufala is made from, and it brings lactose and casein the meat does not have.
Watch for
- Blame the braise before the buffalo.Water buffalo is typically cooked long in spiced, tomato heavy or garlic heavy sauces, and those ingredients are graded far higher on nightshade, salicylate and FODMAP than the meat
- Salicylates and oxalates are graded a borderline B rather than clean and nickel is unrated, so confidence here is lower than for beef or bison.If you are strictly salicylate sensitive, log buffalo separately rather than assuming it behaves like other red meat
- Dried, cured and smoked buffalo, including buff jerky and sukuti, is a different item from a fresh cut.Drying and curing push histamine up and frequently add nitrites and salt
- Alpha-gal syndrome applies.Water buffalo is a mammal, so a tick-triggered alpha-gal allergy reacts to it just as it does to beef, with the reaction arriving hours after the meal instead of minutes
- Buffalo milk products are dairy and carry lactose and casein.The clean meat grades do not transfer to mozzarella di bufala, buffalo yoghurt or buffalo ghee
