What to know about fresh cheese

Fresh cheese is the unaged family of cheeses (mozzarella, ricotta, cottage cheese, cream cheese, queso fresco) and it flips the usual cheese trade-off. Because it is not aged, it is low in histamine (grade A), the opposite of blue cheese or parmesan, but it is high in lactose (grade E) and carries moderate dairy protein. So the fresh cheeses that are safest for histamine intolerance are often the hardest on lactose intolerance. If a caprese salad or a bowl of ricotta leaves you bloated and gassy, lactose is the likely reason, not histamine.

Watch for

  • High in lactose because it is unaged and still holds the milk sugar that aging would break down, a common cause of bloating, gas and cramps
  • Moderate dairy protein (casein and whey), so it can still bother a true dairy-protein sensitivity
  • Low in histamine, which is why fresh cheeses like mozzarella and ricotta are usually tolerated on a low-histamine diet when aged cheeses are not
  • Poor for SIBO and not AIP-compliant, so it is worth limiting on those protocols
