A jar of zaatar spice mix is a ratio rather than a recipe, and the ratio moves with the region: Lebanese blends lean sumac-forward and generous with sesame, Palestinian ones foreground the wild hyssop itself, and some Syrian and Turkish versions fold in caraway or aniseed.
