What to know about mutton

Mutton is meat from a mature sheep, usually over a year old, and it is far cleaner in a trigger journal than its strong reputation suggests. It carries no gluten, no lactose, no dairy protein, no salicylate, no oxalate and no nickel, and plain mutton is low FODMAP. Two things are worth knowing. Mutton grades moderate on both histamine and tyramine, higher than lamb does, because older meat is hung longer and mutton is nearly always slow-cooked and reheated, which is exactly when amines accumulate. And because it is mammalian meat, alpha-gal syndrome applies to mutton in full, the same as to beef, pork or lamb.

Watch for

  • Moderate histamine and moderate tyramine, and both climb with time.Mutton is hung longer than lamb, braised for hours and often eaten as next-day leftovers, which is when amines build up in any meat
  • Alpha-gal syndrome applies without exception.Mutton is mammalian meat, so a tick-triggered alpha-gal allergy reacts to it, typically as a delayed response two to six hours after the meal
  • The dish is usually the trigger, not the sheep.South Asian mutton curry and Caribbean braises are built on onion, garlic, tomato and chilli, which carry far more FODMAP, nightshade and histamine load than the meat does
  • Salted, dried or smoked mutton is a different food chemically.Preserving pushes histamine and tyramine well past what fresh mutton carries
  • Fatty cuts make it a B rather than a clean fit for DASH, though it still sits comfortably in a Mediterranean pattern
